Our rum

  • Out of more than 10 varieties of sugarcane cultivated on Ishigaki island, we have carefully selected two that are most suitable for rum production, all harvested by hand.

  • We distill our rum in the time-honored tradition of distillation using hand-crafted copper pot stills, preserving only the finest part: the heart of the distillation.

  • Maturation is a delicate process, where our rum interacts with carefully selected casks to develop its complex character, enhanced by unique and exceptional finishing touches.

  • Once the rum has matured, we undertake a slow reduction using the pure water of Ishigaki, known for its low mineral content, which helps maintain the balance and subtlety perfected over the years.
